Okay, this is nice. I have not done Stitches Great Escape; still recoiling from its predecessor I fear. So I hadn't seen this.
How on earth did you figure this out??

The last line is obviously a date. So I looked up the opening date of the attraction and sure enough it was November 16, 2004. The letters in the word November were enough for me to decode the rest of it.
